This double layer vegan carrot cake is a great way to end your meal. While tasting this carroty goodness, you get the satisfaction of knowing that you're getting you vegetables as well.
Preheat oven to 350 degrees F. Sift flour, baking powder, salt, ground cinnamon. Add sugar, and mix. Walnuts and carrot pulp go in next. In a separate bowl mix vegetable oil, coconut milk, and vanilla. Once both bowls are mixed, pour wet ingredients into dry. Pour into two circular baking pans, and put into the oven for 25-30 minutes. Let it cool for 20 minutes, ice it, then serve.
