Our family loves curry, we eat it once a week! But when your spice tolerance is low and you want fruits instead of vegetables, you find a way to include it into your meal. That’s why a mango lassi is the perfect drink to cool down your palate while having a spicy curry.
This drink is super easy to make, vegan, and delicious. Simply throw all your ingredients in a blender and there you have it! It’s creamy, sweet, fruity, and good way to add an international flair to your meal.
Because lassi is a yogurt-based beverage, we like to use Silk’s vegan plain almondmilk yogurt because it doesn’t detract from the mango flavor but also provides that creaminess we need with the yogurt. Which is also why we add coconut milk (makes it extra creamy).
I like to use sweetened mango pulp rather than unsweetened because I think it brings out more of the mango flavor. But if you are worried about the drink being too sweet because of the added sugar along with the sweetened mango pulp, you don’t have to add the extra cane sugar. I just like my drink super sweet to cut the intense spice of the curry’s we eat.
If you somehow have extra lassi leftover (don’t know how you would though!) one thing I like to do with it is to add tapioca pearls to it to make mango bubble tea. Mango is my sister’s favorite flavor of boba, so I always make extra. You should try this trick yourself!
Vegan Mango Lassi

- 30 oz Sweetened Mango Pulp
- 1/2 cup Coconut Milk
- 1/2 cup Vegan Plain Yogurt
- 2 cups Ice
- 2 tbsp Cane Sugar (optional)

Simply place all the ingredients into a blender, blend, then serve!

This recipe doubles as a mango lassi and mango bubble tea drink! Just add tapioca pearls to it and there you have it!
